Ingredients
 
 

Chicken:
  • 2 chicken cutlets
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
Breading:
  • 2 eggs
  • ½ cup all-purpose flour
  • ½ cup Italian breadcrumbs
For frying:
  • Neutral oil
For the sandwich:
  • 4 slices of bread toasted with butter
  • 2 tablespoon Caesar dressing divided
  • 2 slices mozzarella cheese melted
  • 2 handfuls iceberg lettuce tossed in Caesar dressing
  • ½ cup freshly grated Parmesan

  1. Season the chicken: In a small bowl, mix together salt, pepper, garlic powder, and smoked paprika. Season both cutlets generously on both sides.
  2. Bread the chicken: Set up a dredging station: one bowl with flour, one with beaten eggs, and one with Italian breadcrumbs. Dip each cutlet in flour → egg → breadcrumbs. Press the crumbs in so they stick and give that super crunchy finish.
  3. Fry until crispy: Heat neutral oil in a shallow pan to 350–375°F. This is the sweet spot for a golden crust without burning. Fry the chicken for 3–4 minutes per side, depending on thickness, until deep golden and crispy. Transfer to a wire rack or paper towel.
  4. Toast the bread: Butter both sides of the bread lightly.
    *Pan method (best flavor): toast on medium heat until golden and crisp.
    **Toaster method: toast first, then spread butter on the warm slices so it melts in.
  5. Melt the mozzarella: You can microwave the slices for 10–15 seconds until soft, or warm them in a small pan over low heat until melty. Add them to the sandwich while they’re warm so they melt into the chicken.
  6. Build the sandwich: Spread Caesar dressing onto your toasted bread.
  7. Layer on: Crispy chicken, Warm mozzarella, Caesar-dressed iceberg & a generous handful of freshly grated Parmesan. Top with the second slice of bread.
  8. Slice it in half… and enjoy!

Notes

Storage.
  • The chicken keeps in the fridge for up to 3 days in an airtight container, and reheat it in the oven or air fryer rather than the microwave so it stays crunchy.
  • Cooked cutlets freeze well for up to 2 months with parchment between them, just thaw overnight before reheating.
  • Don't store assembled sandwiches, keep everything separate and build it when you're eating it.
If the oil is smoking it's too hot, and if the breading isn't bubbling the second it goes in it's too cold.
Press the breadcrumbs on properly. Loose coating falls off in the pan and that's where all the crunch lives.
Rest the fried cutlets on a wire rack, not paper towel or a plate. Sitting in their own steam is what makes breading go soft.
