Ingredients
  

  • 1 cup granulated sugar
  • 6 tablespoon unsalted butter room temperature
  • ½ cup heavy cream 35% room temperature
  • 1 ripe banana
  • 1 teaspoon salt

Method
 

  1. Melt Sugar: Heat sugar in a heavy saucepan over medium heat, stirring constantly until it melts into a smooth amber liquid.
  2. Add Butter: Stir in butter carefully, as the mixture will bubble. If it separates, remove from heat and whisk until smooth.
  3. Add Cream: Slowly pour in the cream while stirring. Let it boil for 1 minute without stirring.
  4. Add Salt & Cool: Remove from heat, stir in salt, and allow to cool. Caramel will thicken as it cools.
  5. Blend in Banana: Once cooled, use a handheld immersion blender to blend in 1 ripe banana until smooth and creamy.
