- Mix the marinade: In a large bowl, whisk together the oil, salt, black pepper, garlic powder, and smoked paprika until it forms a loose paste. It'll look like a deep rusty red — that's exactly right. (WATCH VIDEO BELOW)
- Coat the chicken: Add all 12 drumsticks to the bowl and use your hands (or tongs) to rub the marinade over every single one. Get into the folds and under the skin where you can. You can cook them right away, or cover the bowl and refrigerate for 2 hours if you have the time — totally your call, it works either way!
- Load the slow cooker: Transfer the drumsticks to your slow cooker and pour ½ cup of BBQ sauce over the top. Toss gently so they're all lightly coated. Try to arrange them in as even a layer as you can — piling them too high means the ones on top cook slower. (WATCH VIDEO BELOW)
- Slow cook: Cover and cook on HIGH for 2 to 3 hours, or LOW for 4 to 5 hours. Times vary a lot by slow cooker — mine runs hot, so I start checking at the 2-hour mark. They're done when the meat is tender and pulls back from the bone easily.
- Move to a baking tray: Preheat your oven to 500°F (260°C). Line a baking sheet with foil (trust me, cleanup) and transfer the drumsticks over using tongs. Handle them gently — they're very tender at this point and the meat wants to slide off the bone.
- Brush and bake: Brush each drumstick generously with the extra BBQ sauce, making sure to get the tops and sides. Bake for 5 to 8 minutes, until the sauce tightens up and starts to caramelize. (WATCH VIDEO BELOW)
- Broil for crispy skin: Switch the oven to broil and go for 2 to 3 minutes, watching them the whole time. BBQ sauce has sugar in it and it goes from perfectly caramelized to burnt fast — do not walk away for this part! Pull them the second the edges look glossy and slightly charred.
- Rest and serve: Let them sit for 5 minutes before serving. Brush on a little more sauce if you want them extra saucy, and you're done — the easiest, tastiest slow cooker BBQ drumsticks, ready to go.
Don't drown them in sauce in the slow cooker. This is the mistake I made the first few times. More sauce doesn't mean more flavor — it means the chicken sits in liquid and steams. ½ cup is plenty. Save the rest for the end where it actually caramelizes.
Watch the broiler like a hawk. BBQ sauce is full of sugar and it burns fast. Two to three minutes is usually perfect, but stand there and watch. Every broiler is different.
The high-heat finish is non-negotiable. I tried skipping it once because I was in a rush and the difference is huge. Slow cookers make incredibly tender meat but they cannot crisp skin — the oven does that job in under 10 minutes.

Storage
- Fridge: Store in an airtight container for 3 to 4 days. Let them cool completely first so condensation doesn't make the skin soggy.
- Reheat (oven — best method): 375°F (190°C) for 10–12 minutes, then broil 1–2 minutes to bring the crispiness back. Brush with a little fresh BBQ sauce first if they look dry.
- Reheat (air fryer — fastest): 350°F (175°C) for 5–6 minutes. Honestly the best way to revive the skin.
- Reheat (microwave): 1–2 minutes covered with a damp paper towel. It works, but you'll lose the crispy skin completely.
- Freezer: Freeze in an airtight container or freezer bag for up to 3 months. Thaw overnight in the fridge, then reheat in the oven. Freeze them before the final crisping step if you can — you'll get much better texture when you finish them fresh.
