This spicy chicken burrito is packed with bold flavors, and perfectly toasted for a crispy finish. It's unbelievably easy to make and yet super healthy!

Ingredients
  

  • 500 g Boneless Chicken Thighs
  • 4 Tortilla Wraps
  • Greek Yogurt
  • Fried Rice
  • Corn
  • Onion diced
  • Tomato diced
  • Lettuce chopped
  • Red Pepper diced
Marinate for Chicken:
  • 2 tablespoon Olive Oil
  • Salt & Pepper
  • 1 tablespoon Garlic Powder
  • 1 tablespoon Paprika Powder
  • 1 tablespoon Lemon Juice
Sauce:
  • 2 tablespoon Mayonnaise
  • 1 tablespoon Franks Hot Sauce
  • 1 tablespoon Fresh Parsley chopped

  1. Marinate the Chicken: For best results, marinate the chicken thighs in a mixture of oil and seasonings overnight. If time is short, allow the chicken to marinate while you prepare the vegetables for the burrito.
  2. Cook the Chicken: Heat a skillet over medium-low heat and cook the marinated chicken thighs for 8-10 minutes, ensuring they are golden and cooked through.
  3. Prepare the Sauce: In a small bowl, combine all the sauce ingredients, mixing until smooth. For extra heat, adjust the cayenne pepper to your liking.
  4. Assemble the Burrito: Start by laying the tortilla flat and spreading a generous layer of spicy mayo sauce. Add a generous amount of fried rice, followed by a dollop of creamy Greek yogurt. Layer the cooked chicken and fresh vegetables over the top, ensuring an even distribution for every bite.
  5. Toast the Burrito: Fold the burrito tightly and place it seam-side down in a heated pan over low heat. Toast each side until golden brown and crisp (about 2 minutes on each side).
