  • 3 rice paper sheets
  • 1 egg whisked
  • 1 cooked beef burger patty
  • 2 slices smoked cheese
  • 1 tablespoon burger sauce
  • Sweet and spicy pickle slices
  • Everything bagel seasoning for topping
  • Bacon cooked — optional
  • Cos romaine lettuce leaves
  • A little water for sealing
  • Extra burger sauce for serving

  1. Whisk the Egg: Crack the egg into a wide shallow bowl and whisk until completely smooth — no streaks of white left. A wide bowl matters here, you want the rice paper sheets to lie flat. (WATCH VIDEO BELOW)
  2. Dip and Stack the Rice Paper: Dip all 3 rice paper wrappers into the whisked egg one at a time until fully coated on both sides, stacking each one directly on top of the last on your work surface. Don't soak them — a quick dip is enough, they'll keep softening as you work. Three layers sounds like a lot, but that's exactly what makes the shell strong enough to hold a whole burger.   3. Shape the Cup: Press the stacked rice paper down into a small bowl or ramekin to form a cup shape. Work quickly while the sheets are still slightly firm — once they go fully floppy they're much harder to shape.
  4. Layer the Filling Ingredients: Lay 1 slice of smoked cheese in the bottom, then the cooked ground beef patty, the burger sauce, the sweet and spicy pickles, the bacon if using, and finally the second slice of smoked cheese on top. Cheese on the bottom and top is deliberate — it melts into a seal and keeps the wrapper dry, so all your filling ingredients stay put. (WATCH VIDEO BELOW)
  5. Fold and Seal: Fold the edges of the rice paper over the filling one at a time, pressing each fold down firmly so it sticks to the last. If a fold won't grip, dab it with a little water on your fingertip. You want a completely enclosed parcel with no gaps for cheese to escape.
  6. Flip It Out and Season: Carefully turn the parcel out of the bowl and place it seam-side down in the air fryer basket. Sprinkle the top generously with everything bagel seasoning — do this now while the rice paper is still tacky from the egg, because it won't stick once the surface dries out. Seam-side down is what keeps it sealed — the weight of the burger presses those folds together as it cooks. (WATCH VIDEO BELOW)
  7. Air Fry Until Golden: Air fry at 400°F (200°C) for 10 to 12 minutes, flipping halfway through, until you have deeply golden rice paper that's crisp all over. Keep an eye on it in the last couple of minutes — rice paper goes from golden to too dark fast. (WATCH VIDEO BELOW)
  8. Wrap and Serve: Wrap the crispy burger in a couple of cos lettuce leaves, add extra burger sauce for dipping, and eat immediately while it's at maximum crunch. Seriously — don't let it sit!
  9. Triple layer the rice paper — three sheets, not one or two. This is the single most important tip in the whole recipe. One sheet tears the moment the cheese starts melting and two still go fragile at the folds, so you end up with a leaky mess in the basket. Three stacked rice paper wrappers give you a shell strong enough to hold a whole burger that still shatters when you bite it.
    Let the cooked patty cool for a minute first. A piping hot patty steams the inside of the rice wrap and softens it from within. A minute or two of cooling is all it takes.
    Work fast once the rice paper hits the egg. Rice paper keeps softening after you take it out, so dip all three sheets, stack them on your work surface, and press them into the small bowl straight away. With a triple layer this matters even more — the bottom sheet has been sitting in egg the longest. If you stand around choosing pickles, you'll be fighting a floppy stack.

Notes

Storage

  • Fridge: store leftovers in an airtight container for up to 2 days. The wrapper will soften overnight — that's normal, it crisps back up.
  • Reheat: back into the air fryer at 375°F (190°C) for 3 to 4 minutes. This is the only method I'd recommend — it brings the burger magic back every time.
  • Frying pan: a quick 2 minutes per side in a dry frying pan over medium-high heat also works if your air fryer is busy.
  • Microwave: works if you're desperate, but the rice paper turns soft and chewy. Not the experience you want.
  • Make ahead: cook the patties and mix the sauce a day ahead, then assemble and air fry fresh in under 15 minutes.
  • Freezer: avoid freezing, as the rice paper turns gummy and weeps water when it thaws.
