Prepare the Date "Caramel":
- Lay the pitted Medjool dates sticky-side up on a sheet of plastic wrap. Cover them with parchment paper and roll out with a rolling pin until thin and evenly spread. Use your fingers to patch any gaps or tears.
Wrap the Apple:
- Place the apple at the center of the flattened dates. Using the plastic wrap to help, mold the date layer around the apple, pressing firmly to ensure it sticks. Remove the plastic wrap and set the apple aside.
Melt the Chocolate:
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second increments, stirring between each, until the chocolate is smooth and fully melted.
Dip and Decorate:
- Dip the date-wrapped apple into the melted chocolate, ensuring it’s evenly coated. Sprinkle the chopped peanuts on top while the chocolate is still wet.
Set and Serve:
- Place the apple on a parchment-lined plate and freeze for 20 minutes to set. Slice into wedges or enjoy whole!
