If you've been scrolling TikTok lately, there's a good chance you've seen millionaire bars all over your feed — and honestly, I get it. This version skips the classic shortbread base completely and swaps in a crispy, chewy rice krispie layer instead, which means you get all that rich caramel-and-chocolate flavor without ever turning on your oven.

I tested this one more times than I'd like to admit before the caramel layer came out exactly right — thick, glossy, and not the least bit grainy. Turns out the fix was ridiculously simple (I'll walk you through it in the tips section below), and now this is the treat I reach for anytime I want something that looks way more impressive than the 25 minutes of hands-on work it actually takes.
As the story goes, millionaire bars got their name because they taste rich enough for a millionaire — all that buttery caramel and chocolate stacked on top of each other has that effect. The classic version uses a shortbread cookie base, but I wanted something that came together faster and didn't require rolling out dough or babysitting an oven, so a rice krispie base made the most sense.
My nephew Nole is my toughest food critic — if he keeps coming back for another piece, I know I've got a keeper. He couldn't stop eating these the first time I made them, and now he asks for them by name every time he's over.
Three layers, one pan, zero baking: a crispy rice krispie base, a thick vanilla caramel middle, and a salted chocolatetopping that makes the whole thing taste like a homemade Twix bar the size of a sheet pan. It only takes about 25 minutes of hands-on time — then the hardest part is waiting for it to set! The Best Millionaire Bars Recipe (No-Bake Rice Krispie Treats!)
Ingredients
Equipment
Method
- Prep Your Pan: Line a 9x13-inch baking pan with parchment paper, leaving some overhang on the sides so the bars lift out easily later.
- Melt the Marshmallows and Butter: In a large pot over low-medium heat, melt the butter and mini marshmallows together, stirring constantly, until completely smooth. (WATCH VIDEO BELOW)
- Mix in the Cereal: Remove the pot from heat right away, add the rice cereal, and fold gently until every piece is coated. Work quickly here — the mixture firms up fast.
- Press Into the Pan: Transfer the mixture to your prepared pan. Using greased hands or a piece of parchment, press it firmly and evenly into the corners. Set aside to cool while you make the caramel.
- Make the Vanilla Caramel: In a medium saucepan over medium heat, combine the butter, brown sugar, condensed milk, and salt. Cook, stirring constantly, until melted and starting to bubble, then keep stirring for another 5–7 minutes until thickened and deepened in color. (WATCH VIDEO BELOW)
- Pour the Caramel: Pour the warm caramel over the rice krispie base and spread it into an even layer with an offset spatula or the back of a spoon.
- Chill to Set: Refrigerate for about 1 hour, until the caramel is firm to the touch.
- Melt the Chocolate: Melt the chocolate chips with the oil in the microwave in 20–30 second bursts, stirring between each one, or over a double boiler, until glossy and smooth. (WATCH VIDEO BELOW)
- Top and Sprinkle: Pour the melted chocolate over the set caramel and spread evenly. Sprinkle generously with coarse salt while the chocolate is still wet so it sticks.
- Chill Again and Slice: Refrigerate for another hour or until the chocolate is fully set. Lift the bars out using the parchment overhang, then use a sharp knife run under hot water (and wiped dry between cuts) for clean slices.

Notes
Storage
- Fridge: Store in an airtight container, with parchment between layers, for up to 1 week. These bars actually hold their texture best when kept chilled.
- Room Temp: Fine for up to 2 days in a cool kitchen, but the caramel will be softer and messier to handle.
- Freezer: Wrap bars individually in parchment, then store in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before serving.
- Reheat: Not needed — these are meant to be enjoyed cold or at room temperature, straight from the fridge. If the caramel looks a little cloudy after freezing, don't worry — it clears back up once fully thawed.

Let us know how it was!Substitutions
- Mini marshmallows: large marshmallows, quartered — they'll just take a minute or two longer to melt down
- Unsalted butter: salted butter works fine — just cut the added salt in the caramel by half
- Rice cereal: any crisp rice cereal, including a gluten-free brand, works the same way
- Light brown sugar: dark brown sugar for a deeper, more molasses-y flavor
- Sweetened condensed milk: no great 1:1 swap here — this is what makes the caramel work, so don't skip it
- Semisweet chocolate chips: milk chocolate for a sweeter bar, or dark chocolate if you want it less sweet and more rich
- Dairy-free option: dairy-free butter, dairy-free condensed milk (coconut-based works well), and dairy-free chocolate chips all sub in at a 1:1 ratio
- Coarse salt: flaky sea salt like Maldon — it looks pretty on top and gives the same salty crunch

Frequently asked questions
Can I make millionaire bars ahead of time? Yes, these are one of the best make-ahead desserts you can bring to a party. Make them up to 3 days in advance and store in the fridge in an airtight container until you're ready to serve.
Can I freeze millionaire bars? Yes, they freeze really well for up to 3 months. Wrap individual bars in parchment paper, store them in a freezer-safe container, and thaw overnight in the fridge before eating.
Why did my caramel turn out grainy? Grainy caramel almost always means the sugar crystallized, usually from not stirring constantly or letting the heat run too high. Keep the heat at medium and stir the whole time it cooks for a smooth result.
Can I use regular-sized marshmallows instead of mini? Yes, just cut them into smaller pieces first so they melt down evenly. They'll take a little longer to fully melt than mini marshmallows do.
Why is my chocolate topping cracking when I cut it? This usually happens when the chocolate is cut straight from the fridge or made without any added fat. Add the oil to your melted chocolate as directed, and let the bars sit at room temperature for 10–15 minutes before slicing.
Can I make these gluten-free? Yes, just swap in a certified gluten-free crisp rice cereal — the rest of the ingredients are naturally gluten-free.
What's the difference between millionaire bars and millionaire shortbread? They're essentially the same dessert with a different base. Traditional millionaire shortbread uses a baked butter shortbread cookie layer, while this version swaps that for a no-bake rice krispie base — same caramel and chocolate layers on top, just faster and without the oven.
