Cheesy Beef Quesadilla Oven Recipe (Quick & Easy)

Quick, cheesy, and perfect when you want a whole tray of quesadillas without standing at the stove. These bake up golden, crispy, and loaded with a simple, flavorful beef filling.

Ingredients
  

Meat Mixture
  • 2 tablespoon oil of choice
  • 1 red bell pepper diced
  • 1 onion diced
  • 1 lb ground beef
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 3 tablespoon tomato paste
  • Splash of water to deglaze
To Assemble
  • 3 large tortillas cut in half
  • 4 tablespoon garlic butter
  • 2 cups mozzarella freshly shredded

Method
 

  1. Heat oil in a pan over medium heat. Add the onion and bell pepper, and sauté for 2–3 minutes until softened. (WATCH FULL VIDEO BELOW)
  2. Add the ground beef and cook for 3–4 minutes, breaking it apart, until no longer pink.
  3. Season with salt, garlic powder, and smoked paprika. Stir in the tomato paste. If the pan looks dry or you want to lift up the flavor from the bottom, add a small splash of water to deglaze. Set aside.
  4. Preheat the oven to 400°F (200°C).
  5. Cut the tortillas in half. Add a layer of mozzarella to the center of each half, then spoon 2–3 tablespoons of the beef mixture on top. Fold into triangles and set aside.
  6. Grease a round baking dish with garlic butter. Arrange the folded quesadillas in the dish, brush the tops with more garlic butter, and sprinkle with extra cheese.
  7. Bake for 15 minutes, or until the cheese is melted and the tortillas are golden and crispy.
  8. Serve hot and dip into sour cream, salsa, or guac. (WATCH FULL VIDEO BELOW)
