Ingredients

- Oil of choice
- Red bell pepper, diced
- Onion, diced
- Fresh ground beef
- Salt, garlic powder, smoked paprika
- Tomato paste
- Tortillas
- Garlic butter
- Mozzarella cheese, freshly shredded

Prep the meat filling!

Roll each half tortilla with the meat mixture & cheese!

Cover with butter garlic & the freshly shredded cheese & bake!

Serve hot & enjoy!
- Heat oil in a large skillet or non-stick frying pan over medium heat. Sauté onions and bell pepper for 2–3 minutes until soft.
- Add the fresh ground beef and cook until browned, breaking it apart as it cooks.
- Season with salt, garlic powder, smoked paprika, or taco seasoning. Stir in tomato paste. Add a splash of water to deglaze if needed. Set aside.
- Preheat oven to 400°F (C fan) and line large baking trays, a baking sheet, or a cookie sheet with parchment paper.
- Cut tortillas in half. Add an even layer of cheese and 2–3 tablespoons of the meat mixture to the center. Fold the tortilla into a triangle and arrange on the tray. Brush with garlic butter for extra crispy quesadillas.
- Bake on the highest shelves of the oven for 15 minutes, until golden brown and cheese is fully melted (nice melting cheese, gooey cheese). Serve with pico de gallo, a dollop of sour cream, or tomato salsa.

Method
- Heat oil in a pan over medium heat. Add the onion and bell pepper, and sauté for 2–3 minutes until softened. (WATCH FULL VIDEO BELOW)
- Add the ground beef and cook for 3–4 minutes, breaking it apart, until no longer pink.
- Season with salt, garlic powder, and smoked paprika. Stir in the tomato paste. If the pan looks dry or you want to lift up the flavor from the bottom, add a small splash of water to deglaze. Set aside.
- Preheat the oven to 400°F (200°C).
- Cut the tortillas in half. Add a layer of mozzarella to the center of each half, then spoon 2–3 tablespoons of the beef mixture on top. Fold into triangles and set aside.
- Grease a round baking dish with garlic butter. Arrange the folded quesadillas in the dish, brush the tops with more garlic butter, and sprinkle with extra cheese.
- Bake for 15 minutes, or until the cheese is melted and the tortillas are golden and crispy.
