  • 1 pack of ramen e.g., Buldak Carbonara Ramen
  • 1 egg yolk
  • 1 tablespoon mayonnaise
  • Buldak seasoning packets or see substitutions below if using different ramen
  • ½ cup reserved ramen cooking water

  • Strainer to strain ramen

Method
 

  1. Prepare the Sauce: In the bowl you'll be serving your noodles in, combine the egg yolk, mayonnaise, and Buldak seasoning packets. Mix until smooth and well-combined.
  2. Cook the Noodles: Cook the ramen noodles according to the package instructions.
  3. Combine Noodles with Sauce: Once the noodles are cooked, use tongs or chopsticks to transfer them directly from the pot to the bowl with the sauce. Toss the noodles thoroughly until they are evenly coated and glossy. If the mixture is too thick, gradually add the reserved ramen water to reach your desired consistency.

How To Store:
Fridge up to 2 days, reheat with a splash of hot water. 
 
Add the hot ramen water slowly. Stir it in a little at a time so the egg yolk warms through and turns silky instead of scrambling.
Use the reserved noodle water to loosen it. If the sauce feels too thick, a splash of that starchy water thins it out and helps it coat every noodle.
Serve it right away. This one's best hot and fresh, right after you toss it, so the sauce stays glossy and the noodles keep their bite.
