- Cook the Pasta: Bring a pot of well-salted water to a boil and cook the 8 ounces of shell pasta to al dente according to package directions. Before you drain it, scoop out about a cup of the starchy pasta water and set it aside — you may want it later to loosen the sauce. Drain and set the pasta aside.
- Sauté the Garlic: In a large pot or deep skillet, heat the 3 tablespoons of olive oil over medium heat. Add the minced garlic and stir for about 20–30 seconds — just until it smells amazing. Don't let it brown or the whole sauce turns bitter. (WATCH VIDEO BELOW)
- Cook the Zucchini Down: Add the diced zucchini right away, along with the full teaspoon of salt. Sauté for 7–8 minutes, stirring occasionally, until the zucchini is completely soft and any liquid has cooked off. You want it jammy and collapsing, not still crisp — this is where the creaminess comes from. (WATCH VIDEO BELOW)
- Blend the Sauce: Transfer half of the cooked zucchini to a blender. Add the 2 ½ cups of milk and the 1 ½ teaspoons of cornstarch, then blend until completely smooth. It'll look thin at this stage — that's normal, the cornstarch thickens once it's back on the heat. (WATCH VIDEO BELOW)
- Bring It Together: Pour the blended sauce back into the pot with the remaining zucchini. Cook over medium-low heat, stirring often, until it thickens enough to coat the back of a spoon — usually 3–4 minutes. Keep it at a gentle simmer; a hard boil can make the milk break.
- Season and Finish: Stir in the teaspoon of garlic powder and ¼ teaspoon black pepper. Take the pot off the heat, then add the cooked pasta and the 1 cup of freshly grated Parmesan (or mozzarella). Stir until the cheese melts into the sauce. Adding it off heat is important — cheese added to a simmering sauce seizes up and goes stringy. (WATCH VIDEO BELOW)
- Taste and Serve: Season with more salt and pepper to taste, and loosen with a splash of that reserved pasta water if it's thicker than you want. Serve right away, topped with extra Parmesan and a good crack of black pepper.
Blend only half the zucchini. This was the single change that made this recipe click for me. Blending everything gives you a smooth but flat sauce — leaving half whole gives you creamy sauce plus soft, savory bites of vegetable throughout.
Cook the zucchini longer than feels necessary. Seven to eight minutes, until it's genuinely soft and starting to collapse. Undercooked zucchini won't blend smooth and the sauce will taste raw and grassy.
Salt the zucchini while it cooks, not after. That teaspoon of salt going in at the start pulls the water out of the zucchini so it evaporates in the pan. Salt at the end and that water ends up in your sauce, which is exactly how you get a watery, sad result.

Storage
- Fridge: Store in an airtight container for up to 4 days. The pasta absorbs sauce as it sits, so it'll look thicker the next day — that's normal.
- Reheat (stovetop, best method): Warm gently over low heat with a splash of milk to bring the sauce back to life, stirring until it's silky again. This takes about 3–4 minutes.
- Reheat (microwave): Add a tablespoon of milk, cover, and heat in 45-second bursts, stirring between each.
- Freezer: Avoid freezing the finished pasta — milk-based sauces separate when thawed and the pasta turns mushy. You can freeze the blended sauce on its own for up to 2 months; thaw overnight in the fridge and whisk well while reheating.
