Creamy Zucchini Pasta Recipe (25-Minute Dinner, No Heavy Cream!)

This creamy zucchini pasta is the recipe I make when I have two sad zucchinis in the fridge and about twenty-five minutes before I get genuinely hangry. The sauce is silky, garlicky, and tastes like it has a cup of heavy cream in it — but it's just milk, a little cornstarch, and blended zucchini doing all the work.

My first few tries came out watery, because zucchini releases a ton of liquid once it hits the pan. The fix was salting it while it sautés so the water cooks off, and blending only half the veggies so you still get soft, jammy pieces in every bite.

My nephew Nole is two and he loves this — which is honestly the highest praise a plate of hidden vegetables can get!

Ingredients
  

For the zucchini base:
  • 3 tablespoons olive oil
  • 5 cloves garlic minced
  • 2 medium zucchinis diced (about 1 pound total) — no need to peel, the skin blends right in and adds color
  • 1 teaspoon salt
For the blended sauce:
  • 2 ½ cups milk
  • 1 ½ teaspoons cornstarch this is what thickens the sauce into something glossy and cream-like
To finish:
  • 1 teaspoon garlic powder
  • ¼ teaspoon black pepper
  • 8 ounces shell pasta cooked
  • 1 cup freshly grated Parmesan or mozzarella — freshly grated, not the pre-shredded bag. Pre-shredded cheese is coated in anti-caking starch and it makes the sauce grainy.
  • Extra Parmesan
  • Salt and black pepper

Method
 

  1. Cook the Pasta: Bring a pot of well-salted water to a boil and cook the 8 ounces of shell pasta to al dente according to package directions. Before you drain it, scoop out about a cup of the starchy pasta water and set it aside — you may want it later to loosen the sauce. Drain and set the pasta aside.
  2. Sauté the Garlic: In a large pot or deep skillet, heat the 3 tablespoons of olive oil over medium heat. Add the minced garlic and stir for about 20–30 seconds — just until it smells amazing. Don't let it brown or the whole sauce turns bitter. (WATCH VIDEO BELOW)
  3. Cook the Zucchini Down: Add the diced zucchini right away, along with the full teaspoon of salt. Sauté for 7–8 minutes, stirring occasionally, until the zucchini is completely soft and any liquid has cooked off. You want it jammy and collapsing, not still crisp — this is where the creaminess comes from. (WATCH VIDEO BELOW)
  4. Blend the Sauce: Transfer half of the cooked zucchini to a blender. Add the 2 ½ cups of milk and the 1 ½ teaspoons of cornstarch, then blend until completely smooth. It'll look thin at this stage — that's normal, the cornstarch thickens once it's back on the heat. (WATCH VIDEO BELOW)
  5. Bring It Together: Pour the blended sauce back into the pot with the remaining zucchini. Cook over medium-low heat, stirring often, until it thickens enough to coat the back of a spoon — usually 3–4 minutes. Keep it at a gentle simmer; a hard boil can make the milk break.
  6. Season and Finish: Stir in the teaspoon of garlic powder and ¼ teaspoon black pepper. Take the pot off the heat, then add the cooked pasta and the 1 cup of freshly grated Parmesan (or mozzarella). Stir until the cheese melts into the sauce. Adding it off heat is important — cheese added to a simmering sauce seizes up and goes stringy. (WATCH VIDEO BELOW)
  7. Taste and Serve: Season with more salt and pepper to taste, and loosen with a splash of that reserved pasta water if it's thicker than you want. Serve right away, topped with extra Parmesan and a good crack of black pepper.
  8. Blend only half the zucchini. This was the single change that made this recipe click for me. Blending everything gives you a smooth but flat sauce — leaving half whole gives you creamy sauce plus soft, savory bites of vegetable throughout.
    Cook the zucchini longer than feels necessary. Seven to eight minutes, until it's genuinely soft and starting to collapse. Undercooked zucchini won't blend smooth and the sauce will taste raw and grassy.
    Salt the zucchini while it cooks, not after. That teaspoon of salt going in at the start pulls the water out of the zucchini so it evaporates in the pan. Salt at the end and that water ends up in your sauce, which is exactly how you get a watery, sad result.

Notes

Storage 

  • Fridge: Store in an airtight container for up to 4 days. The pasta absorbs sauce as it sits, so it'll look thicker the next day — that's normal.
  • Reheat (stovetop, best method): Warm gently over low heat with a splash of milk to bring the sauce back to life, stirring until it's silky again. This takes about 3–4 minutes.
  • Reheat (microwave): Add a tablespoon of milk, cover, and heat in 45-second bursts, stirring between each.
  • Freezer: Avoid freezing the finished pasta — milk-based sauces separate when thawed and the pasta turns mushy. You can freeze the blended sauce on its own for up to 2 months; thaw overnight in the fridge and whisk well while reheating.

Substitutions

  • Milk: Unsweetened oat milk or cashew milk — both blend creamy and stay neutral in flavor.
  • Parmesan: Nutritional yeast (about ¼ cup) for a dairy-free version, or Pecorino Romano for something sharper and saltier.
  • Shell pasta: Rotini, penne, orecchiette, or rigatoni all work — anything with ridges or cups that trap sauce.
  • Gluten-free: Any gluten-free short pasta. Cook it a minute under the package time, since GF pasta softens fast in sauce.
  • Cornstarch: Arrowroot starch, same amount. Or use 1 tablespoon flour whisked into the milk instead.
  • Zucchini: Yellow summer squash, one-for-one. It's slightly sweeter but behaves exactly the same.
  • Olive oil: Butter, for a richer and more classic alfredo-ish flavor.
  • Add protein: Stir in shredded rotisserie chicken, cooked shrimp, white beans, or crispy pancetta at the end.
  • Fresh garlic: 1 ½ teaspoons garlic powder total if you're out of fresh — not as good, but it'll do in a pinch.
  • Make it spicy: Add ¼ teaspoon red pepper flakes with the garlic.

Frequently asked questions

Is zucchini pasta the same thing as zoodles? No — this is real pasta with a creamy zucchini sauce, not spiralized zucchini noodles. A lot of "zucchini pasta" recipes online are low-carb zoodles, so if you came here wanting actual pasta, you're in the right place. This recipe uses 8 ounces of shell pasta with zucchini blended into the sauce.

Why is my zucchini pasta sauce watery? The zucchini wasn't cooked down long enough before blending. Zucchini is over 90% water, so it needs a full 7–8 minutes over medium heat with salt to release and evaporate that liquid. If your sauce is already thin, simmer it a few extra minutes or whisk in another ½ teaspoon of cornstarch mixed with a tablespoon of cold milk.

Do I need to peel the zucchini? No, leave the skin on. It blends in completely, adds a pretty green flecking to the sauce, and holds most of the zucchini's nutrients. Just wash it well and trim the ends.

Can I make this ahead of time? Make the sauce up to 3 days ahead and store it separately from the pasta. Reheat the sauce gently with a splash of milk, then toss with freshly cooked pasta and the cheese off heat — it comes out far better than reheating the whole assembled dish.

Can I make this dairy-free? Yes, swap the milk for unsweetened oat or cashew milk and use ¼ cup nutritional yeast in place of the Parmesan. Oat milk is the closest match for texture since it's naturally creamy and won't split.

Will my kids notice the zucchini? Most kids don't, especially if you blend all of it instead of half. My two-year-old nephew Nole eats this happily, and the sauce just reads as a mild, garlicky cream sauce — the green flecks look like herbs, not vegetables.
