Boil a large pot of salted water for the pasta while making the sauce.
Heat olive oil in a
large skillet over medium-high heat.
Chop the onion and mince the garlic. Cook them in the oil until the onion is soft.
Pour in the white wine, then add the saffron. Let it simmer over medium heat for 8-10 minutes.
Stir in the heavy cream and simmer on low heat for another 10 minutes until the sauce thickens.
Season the sauce with salt, pepper, and any other desired seasonings.
Add the cooked pasta to the pasta sauce, mix well, and serve. Enjoy your delicious saffron pasta!
