Saffron pasta isn't specifically tied to particular seasons or holidays, but its vibrant color and luxurious flavor make it a fitting choice for celebratory occasions year-round. It's particularly popular for special dinners or special occasion when you want to impress guests with a unique and elegant dish.

Ingredients

- Linguine Pasta
- Extra Virgin Olive Oil
- Medium Yellow Onion
- Garlic Cloves
- Dry White Wine
- Saffron
- Heavy Cream
- Salt & Pepper
- Unsalted Butter (optional)

Instructions for Easy and Creamy Homemade Saffron Pasta

Sauté the onions & garlic. Add in white wine & saffron.

Add in the heavy cream & let the sauce simmer.

Place your cooked al dente linguine pasta into the sauce.

Serve & enjoy!
1. Boil a large pot of salted water for the pasta while making the sauce.
2. Heat olive oil in a large skillet over medium-high heat.
3. Chop the onion and mince the garlic. Cook them in the oil until the onion is soft.
4. Pour in the white wine, then add the saffron. Let it simmer over medium heat for 8-10 minutes.
5. Stir in the heavy cream and simmer on low heat for another 10 minutes until the sauce thickens.
6. Season the sauce with salt, pepper, and any other desired seasonings.
7. Add the cooked pasta to the pasta sauce, mix well, and serve. Enjoy your delicious saffron pasta!
8. Add grated parmesan cheese to creamy saffron pasta sauce for extra flavour. This is optional.
Substitutions
Linguine Pasta: You can substitute linguine pasta with spaghetti, fettuccine, or any other long type of pasta shape tagliatelle or pappardelle.
Olive Oil: You can use other cooking oils like vegetable oil, canola oil, or sunflower oil. If you prefer a richer flavor, you can also use melted butter as a substitute.
Medium Yellow Onion: Substitute with white onion, red onion, or shallots for a slightly different flavor profile.
Garlic Cloves: If you don't have fresh garlic cloves, you can use garlic powder or garlic paste. Adjust the quantity to taste.
Dry White Wine: Replace with chicken or vegetable broth for a non-alcoholic option. Alternatively, you can use apple cider vinegar mixed with water or white grape juice for a similar acidity.
Saffron: Saffron has a quite unique flavor, but if you don't have it, you can substitute with a pinch of turmeric for color and a subtle flavor. Keep in mind that turmeric has a stronger flavor, so use it sparingly. Saffron flavor is quite different than any other seasoning to keep in mind.
Heavy Cream: You can substitute heavy cream with half-and-half, whole milk, coconut milk (for a dairy-free option), or a combination of milk and butter for richness.
Salt & Black Pepper: These are basic seasoning ingredients, you can substitute sea salt with kosher salt and you can customize with other fresh herbs and spices like Italian seasoning, basil, oregano, or red pepper flakes for additional flavor. Adjust according to your taste preferences.

How to Store & Reheat
To store your saffron pasta, let it cool to room temperature, then put it in a sealed container in the fridge for up to 3-4 days. If you want to keep it longer, freeze it in portions.
To reheat:
1. Microwave: Put a serving in a microwave-safe bowl, cover it with a damp paper towel, and heat for 1-2 minutes.
2. Stovetop: Warm it in a skillet with a bit of water or broth.
3. Oven: Heat it in an oven-safe dish covered with foil at 350°F (175°C) for about 15-20 minutes.
3 Top Tip's for Success
1. Quality Saffron: Invest in good high-quality saffron for the best flavor and color. Look for saffron threads that are deep red and aromatic. Use them sparingly as saffron is potent, and a little goes a long way.
2. Don't Overcook: Cook the pasta just until it's al dente, meaning it's cooked but still slightly firm to the bite. Overcooking can result in mushy pasta. Keep an eye on it and test for doneness a couple of minutes before the recommended cooking time.
3. Balanced Seasoning: Taste and adjust the seasoning of your sauce before combining it with the pasta. Saffron has a delicate flavor, so be cautious not to overpower it with too much salt or other seasonings. Balance the flavors to complement the saffron's unique taste.
