Easy Bruschetta Toast Recipe

Do you need a light & refreshing summer breakfast? Bruschetta Toast is just bursting with flavour with it's cold & juicy sliced tomatoes, combined with the fresh basil & spicy garlic, an addicting mixture when served over top some crunchy toast!

Ingredients
  

INGREDIENTS FOR BRUSCHETTA TOPPING:
  • 6 Roma tomatoes 1 ½ lbs, diced
  • ½ cup basil leaves chopped
  • 5 garlic cloves minced
  • 1 tablespoon balsamic vinegar
  • ¼ cup extra virgin olive oil
  • 1 teaspoon sea salt
  • balsamic glaze (optional)
INGREDIENTS FOR TOASTS:
  • 6 slices of bread of choice preferably, sourdough
  • 6 tablespoon extra virgin olive oil optional

Prepare the Tomato Mixture:
  1. Dice the Roma tomatoes and place them in a medium-sized mixing bowl.
  2. Stack the basil leaves, roll them tightly, and slice them into thin ribbons. Add to the tomatoes.
  3. Mince the garlic cloves and mix them into the bowl with the tomatoes and basil.
  4. Drizzle in the olive oil and balsamic vinegar, and season with sea salt. Gently stir to combine the flavors.
  5. Cover and refrigerate the mixture for 15-30 minutes to allow the flavors to meld.
Prepare the Toasts:
  1. Toast the bread slices in a toaster or air fryer until golden brown.
  2. For a richer flavor, brush each slice with 1 tablespoon of olive oil and toast in a skillet over medium heat until crispy and golden.
Assemble and Serve:
  1. Spoon the marinated tomato mixture onto the warm toasts.
  2. For an extra touch, drizzle with additional sweet balsamic glaze.
  3. Serve immediately and enjoy!
