- In a saucepan, combine the chopped ginger, brown sugar, and water. Bring the mixture to a simmer over medium heat.
- Let it simmer gently for 15-20 minutes, stirring occasionally, until the sugar dissolves and the ginger infuses the syrup.
- Remove from heat and allow the ginger syrup to cool completely. Once cooled, strain the syrup into a jar and discard the ginger pieces.
- To serve, fill a glass with ice cubes. Add 2-3 tablespoons of the ginger syrup and squeeze in the juice of half a lemon.
- Top it off with sparkling mineral water and stir well to combine.
- Garnish with a lemon slice for an extra refreshing touch. Enjoy your homemade ginger ale!

Note: Do not skip the lemon juice at the end!! It's not the same without it:)
