- In a bowl combine chia seeds, milk, maple syrup, and vanilla extract stirring well. Let the mixture sit for 5-10 minutes, then whisk again to remove any clumps.
- Cover and refrigerate for at least 3 hours or overnight.
- Meanwhile in a separate bowl, combine and mix the pumpkin puree, greek yogurt, maple syrup, and a pinch of salt until smooth.
- Layer the chia pudding with the pumpkin cream and finish with a sprinkle of cinnamon.
- optional: Top off with fresh fruit of choice.
