Substitutions

  • Chia seeds: flaxseeds, hemp seeds, or rolled oats
  • Milk: non-dairy milk options like almond milk, coconut milk, oat milk, or soy milk
  • Maple syrup: honey, agave syrup, or date syrup
  • Vanilla extract: almond extract, maple extract, or cinnamon
  • Pumpkin puree: sweet potato puree, butternut squash puree, or mashed carrots
  • Greek yogurt: coconut yogurt, cashew yogurt, or regular yogurt
  • Salt: sea salt, Himalayan salt, or a pinch of kosher salt

Variations

  • Chocolate Pumpkin Chia Pudding: Add 1-2 tablespoons of cocoa powder to the chia mixture for a rich, chocolatey twist.
  • Spiced Pumpkin Chia Pudding: Mix in extra spices like nutmeg, ginger, and cloves for a warm, spiced flavor.
  • Protein Boost: Stir in a scoop of vanilla protein powder or a spoonful of almond butter for added protein.
  • Fruit Layered: Add a layer of fresh fruit like sliced bananas, apples, or berries between the chia pudding and pumpkin cream.
  • Coconut Pumpkin Chia Pudding: Use coconut milk and top with shredded coconut for a tropical flair.

Equipment

  • Glass Airtight Container
  • Small Bowl
  • Whisk
  • Measuring Cups & Spoons

Storage

Store your pumpkin chia pudding in an airtight container in the refrigerator for up to 5 days. Keep the chia pudding and pumpkin cream layered or stored separately if you prefer assembling fresh. For best texture, give it a quick stir before serving. Avoid freezing, as it may alter the consistency.

Top tips for Success

  1. Use full-fat milk or yogurt: This adds creaminess and a richer texture to your chia pudding.
  2. Stir twice: Stir the chia mixture once after 5-10 minutes and again before refrigerating to avoid clumping.
  3. Chill overnight: Allow the pudding to sit in the fridge overnight for the best texture and flavor infusion.

FAQs

Can I make this pumpkin chia pudding vegan?

Yes! Simply use a plant-based milk like almond or coconut milk and swap Greek yogurt for a dairy-free alternative like coconut yogurt.

How long does pumpkin chia pudding last in the fridge?

It will stay fresh for up to 5 days when stored in an airtight container in the refrigerator.

Can I use canned pumpkin puree?

Absolutely! Just make sure it's 100% pure pumpkin and not pumpkin pie filling, which has added sugar and spices.
