The Best Crispy Smashed Potatoes with Creamy Garlic Parmesan Sauce

These crispy smashed potatoes are the side dish I make when I want people to be impressed but I don't want to actually work for it. Shatteringly crispy edges, fluffy creamy centers, and a cold garlic parmesan sauce poured right over the top. My husband Ogi asks for these every single time I make steak on our date nights!

Most smashed potato recipes get you soft potatoes with a slightly crunchy edge and call it a day. I tested this at 425°F and 450°F before landing on 500°F plus a quick broil — that's what turns the edges into actual crunch instead of just golden.

Ingredients
  

For the potatoes:
  • 2 pounds baby potatoes the smaller the better
  • 1 tablespoon coarse salt for the boiling water
  • Avocado oil spray
  • 2 teaspoons salt for the tops
  • Black pepper to taste
For the creamy garlic parmesan sauce:
  • 1 cup sour cream full fat
  • ½ cup mayonnaise
  • 1 cup green onions chopped
  • 2 garlic cloves grated (not minced!)
  • ½ cup Parmesan freshly grated
  • 2 tablespoons fresh lemon juice
  • Salt and black pepper to taste

Method
 

  1. Boil the potatoes: Add your baby potatoes to a large pot, cover with cold water, and stir in 1 tablespoon of coarse salt. Bring to a boil and cook for 15–20 minutes, until a fork slides straight through with no resistance. Don't rush this — undercooked potatoes won't smash, they'll crumble. (WATCH VIDEO BELOW)
  2. Preheat the oven: While the potatoes boil, preheat your oven to 500°F. Yes, 500. This is the whole secret to crispy smashed potatoes and it's where most recipes play it too safe.
  3. Make the garlic parmesan sauce: In a medium bowl, whisk together the sour cream, mayo, chopped green onions, grated garlic, freshly grated Parmesan, and fresh lemon juice. Season with salt and pepper and whisk until completely smooth. Pop it in the fridge while the potatoes cook — the flavor gets better as it sits. (WATCH VIDEO BELOW)
  4. Drain and dry: Drain the potatoes and let them sit in the colander for about 5 minutes. This steam-drying step is small but it makes a real difference — wet potatoes steam in the oven instead of crisping.
  5. Smash them: Transfer the potatoes to a sheet pan, spacing them out so they aren't touching. Place a second sheet pan on top and press down firmly and evenly until they're about ½ inch thick. This is so much faster than smashing them one by one with a cup! (WATCH VIDEO BELOW)
  6. Season and bake: Spray generously with avocado oil spray and sprinkle with about 2 teaspoons of salt and a good crack of black pepper. Bake at 500°F for 15–20 minutes, until the edges are deep golden and starting to curl up.
  7. Broil to finish: Switch the oven to broil on high and go for 2–3 minutes. Stay right there and watch them — at this temperature they go from perfect to burnt fast. Pull them when the edges are dark golden and crackly. (WATCH VIDEO BELOW)
  8. Sauce and serve: Transfer the hot potatoes to a big serving bowl and pour that cold, creamy garlic parmesan sauce right over the top. Toss gently or leave it pooled on top — either way, serve immediately while they're still crispy. (WATCH VIDEO BELOW)
  9. Go hotter than you think. 500°F is the single biggest difference between these and every other smashed potato recipe. 425°F and 450°F both gave me golden potatoes that were still a little soft — 500°F plus the broil is what gets you actual crunch.
    Let them steam dry before smashing. Five minutes in the colander lets the surface moisture evaporate. Wet potatoes steam themselves in the oven, and steam is the enemy of crispy.
    Salt the boiling water like pasta water. A full tablespoon of coarse salt seasons the potato from the inside out. If you skip it, you'll be chasing the flavor with salt on top later and it won't taste the same.

Storage

  • Fridge: Store the potatoes and sauce separately in airtight containers. Potatoes keep 3–4 days, the sauce keeps up to 5 days. Sauced potatoes go soggy overnight, so don't combine leftovers.
  • Reheat (best method): Oven or air fryer at 400°F for 6–8 minutes until they crisp back up. Do not add oil first — they still have plenty.
  • Reheat (microwave): Works in a hurry, but you'll lose the crunch completely. If you're microwaving, just accept they'll be soft and delicious rather than crispy.
  • Freezer: You can freeze the baked potatoes flat on a tray for up to 2 months and reheat straight from frozen at 425°F for 15 minutes. Do not freeze the sauce — sour cream and mayo split when thawed and the texture never comes back.

Substitutions

  • Baby potatoes: Baby Yukon Gold, red potatoes, or fingerlings all work — just keep them small and similar in size so they cook evenly.
  • Sour cream: Full-fat Greek yogurt works and makes the sauce a little tangier and lighter.
  • Mayonnaise: Swap in more sour cream or Greek yogurt, though the sauce will be a bit less silky.
  • Dairy-free: Use a plant-based sour cream, vegan mayo, and nutritional yeast in place of the Parmesan — about ⅓ cup.
  • Parmesan: Pecorino Romano is saltier and sharper, Grana Padano is milder. Both are great here.
  • Green onions: Fresh chives are the closest swap. Fresh dill is also incredible if you want it more Balkan-tasting.
  • Fresh garlic: ½ teaspoon garlic powder in a pinch, but fresh grated is worth it in a no-cook sauce.
  • Lemon juice: White wine vinegar or apple cider vinegar, start with 1 tablespoon and taste.
  • Avocado oil spray: Any high smoke point oil — light olive oil, grapeseed, or melted ghee. Skip extra virgin olive oil at 500°F.
  • Want it a meal? Add crispy bacon bits or shredded rotisserie chicken on top and it goes from side dish to dinner.

Frequently asked questions

Why aren't my smashed potatoes crispy? The most common cause is moisture — the potatoes went into the oven still wet from boiling. Drain them and let them steam dry for 5 minutes before smashing, spread them out so they aren't touching on the pan, and bake at 500°F rather than a lower temperature.

Can I make crispy smashed potatoes in the air fryer? Yes, and they come out excellent. Boil and smash as directed, then air fry at 400°F for 12–15 minutes, flipping once halfway, until the edges are deep golden. Work in batches so they aren't overlapping.

Can I make these ahead of time? You can boil and smash the potatoes up to a day ahead and keep them covered on the sheet pan in the fridge, then bake right before serving. The sauce can also be made up to 3 days ahead. I don't recommend fully baking them ahead — they lose the crunch within about 20 minutes.

What potatoes are best for smashed potatoes? Baby Yukon Gold or baby red potatoes are the best choice because they're waxy enough to hold together when smashed and creamy inside. Look for ones no bigger than 2 inches across so they cook through evenly.

Do I need to peel the potatoes? No, leave the skins on. The skin is what crisps up into those crackly edges, and peeling would mean the potatoes fall apart when you smash them.

Can I use pre-grated Parmesan cheese? Freshly grated Parmesan is much better here — the pre-shredded bags are coated with anti-caking starch that makes a no-cook sauce feel gritty. Grate it yourself on a microplane and the sauce will be noticeably smoother.

What do you serve smashed potatoes with? They go with almost any main — roast chicken, steak, pork chops, salmon, or grilled sausages. They're also great on their own as a party appetizer with extra sauce for dipping.
