Ogi and I made this on a night we were craving something spicy, and it hit the spot without totally wrecking us. The mayo and egg yolk take the edge off the heat and make the sauce so rich and smooth, but it still has that buldak kick.

- Buldak Ramen: the flavor you pick sets the heat. The original is very spicy; the Carbonara flavor is the mildest. No buldak nearby? Use another spicy ramen and add a little gochujang or chili to get close.
- Mayonnaise: this is what makes the sauce creamy and takes the edge off the spice. Kewpie (Japanese mayo) is especially good here if you have it.
- Egg Yolk: adds richness and makes the sauce silky. Stir in the hot ramen water gradually so the yolk warms through instead of scrambling.
