Rich, naturally sweet, lightly caramel-y, and so incredibly smooth. And this version is completely dairy-free, takes literally 5 minutes, and you only need a blender. That's it.

I tested this so many times — tweaking the water-to-date ratio, the almond butter amount, the salt — until it hit that perfect balance. The pinch of salt is non-negotiable, by the way. It makes the sweetness pop in the best way.

  • 1 tablespoon almond butter
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • 1 cup ice
  • 3 cups water

Method
 

  1. Step 1 — Prep the dates: Remove the pits from your Medjool dates if they aren't already deseeded. Give them a quick check — sometimes a little pit fragment is hiding inside. No soaking needed if you're using Medjool dates; they're soft enough to blend straight from the packet. (WATCH VIDEO BELOW)
  2. Step 2 — Add everything to the blender: Add the 2 deseeded dates, 1 tablespoon almond butter, ½ teaspoon vanilla extract, pinch of salt, 1 cup ice, and 3 cups water to your blender. No special order required — just throw it all in. (WATCH VIDEO BELOW)
  3. Step 3 — Blend until smooth: Blend on high for about 45–60 seconds, until completely smooth and creamy. You want the dates fully broken down — no chunks. If your blender is on the weaker side, blend for a full 90 seconds. (WATCH VIDEO BELOW)
  4. Step 4 — Taste and adjust: Give it a quick taste before serving. Want it sweeter? Add a third date. Want it thinner? Add a splash more water. Want more depth? A pinch more salt goes a long way.
  5. Step 5 — Shake before serving: Pour into glasses or a bottle and always shake before serving — this is a natural, preservative-free drink, so it will separate slightly as it sits. That's completely normal! A quick shake brings it right back together.

Notes

Use Medjool dates — not any other kind. I tested this with Deglet Noor dates without soaking them first and ended up with a gritty texture. Medjool dates are naturally soft and blend completely smooth right from the pack. If Medjool aren't available, soak whatever dates you have in warm water for at least 15 minutes first.
The almond butter is the secret weapon. Every other date milk recipe I found online uses just dates, water, and maybe a spice. Adding almond butter completely transforms the texture — it gives the milk a body and creaminess that water alone can't achieve, plus a subtle nuttiness that makes it feel almost like a latte.
Don't skip the salt. A pinch of salt in a sweet drink sounds strange, but it's a professional pastry technique — it enhances sweetness without adding sugar. I tested batches with and without salt and the difference was genuinely noticeable. Add it.
Storage: 
  • Fridge: Store in a sealed glass bottle or mason jar for up to 3 days. The drink will naturally separate — this is normal and not a sign it's gone bad.
  • Shake before serving: Always give it a good shake or stir before drinking; it takes 5 seconds and brings it right back together.
  • Freezer: Pour into ice cube trays and freeze for up to 1 month. Drop the frozen cubes into smoothies, coffee, or oatmeal for a naturally sweet boost.
  • Room temperature: Do not leave out for longer than 2 hours.
