  1. Marinate the Chicken: For best results, marinate the chicken thighs in a mixture of oil and seasonings overnight. If time is short, allow the chicken to marinate while you prepare the vegetables for the burrito.
  2. Cook the Chicken: Heat a skillet over medium-low heat and cook the marinated chicken thighs for 8-10 minutes, ensuring they are golden and cooked through.
  3. Prepare the Sauce: In a small bowl, combine all the sauce ingredients, mixing until smooth. For extra heat, adjust the cayenne pepper to your liking.
  4. Assemble the Burrito: Start by laying the tortilla flat and spreading a generous layer of spicy mayo sauce. Add a generous amount of fried rice, followed by a dollop of creamy Greek yogurt. Layer the cooked chicken and fresh vegetables over the top, ensuring an even distribution for every bite.
  5. Toast the Burrito: Fold the burrito tightly and place it seam-side down in a heated pan over low heat. Toast each side until golden brown and crisp.

How to Store & Reheat
