Ingredients

  • Ground beef
  • Yellow Onion
  • Tomato sauce
  • Flour tortillas
  • Spicy mayo
  • Fried rice
  • Nacho cheese sauce
  • Monterey Jack or Marble Cheese (for shredded cheese option)
  • Sour cream
  • Tortilla chips
  • Salt and Black Pepper
  • Smoked Paprika, Oregano Powder, Garlic Powder
  • Taco Seasoning (optional)

Instructions

Sauté onion & beef until fully cooked.

Layer all the toppings in the burrito.

  1. Prepare the Ground Beef: Heat olive oil in a large skillet over medium-high heat. Add the diced onion and sauté for about 5 minutes until softened and translucent.
  2. Add the ground beef to the skillet, cooking it until fully browned. Break up any large pieces as you cook. Season the beef with salt, smoked paprika, and oregano. Stir to combine, allowing the spices to bloom for about 1 minute.
  3. Pour in the tomato sauce, lower the heat, and let it simmer for 5 minutes, letting the flavors meld.
  4. Assemble the Burritos: Lay each flour tortilla flat. Spread about 1 tablespoon of spicy mayo down the center. Add a spoonful of fried rice, then drizzle with nacho cheese sauce and something optional but amazing is some extra shredded cheese, gives an amazing touch. Follow with a dollop of sour cream and a sprinkle of crispy tortilla chips. Add a generous portion of the seasoned ground beef on top.
  5. Roll and Grill: Fold in the sides of the tortilla and roll it up tightly from the bottom, securing the filling. Heat a non-stick skillet or griddle over medium heat. If desired, sprinkle shredded Mexican cheese blend directly onto the hot surface. Place the burrito seam-side down on top of the cheese and grill for 2-3 minutes per side, until the cheese forms a crispy, golden crust resulting in a nice crunch for every bite.

Ground beef: ground turkey, chicken, plant-based ground meat, lentils, or black beans

Onion: shallots, leeks, green onions, or onion powder

Tomato sauce: crushed tomatoes, tomato paste with water, or marinara sauce

Flour tortillas: corn tortillas, lettuce wraps, low-carb wraps, or gluten-free wraps

Spicy mayo: regular mayo with hot sauce, Greek yogurt with chili powder, or avocado mash with lime and cayenne

Fried rice: quinoa, cauliflower rice, or brown rice

Nacho cheese sauce: shredded cheddar cheese with milk, queso fresco, cotija cheese, or vegan cheese sauce

Sour cream: Greek yogurt, blended cottage cheese, reduced-fat sour cream, or vegan sour cream

Tortilla chips: crushed corn chips, Doritos, pita chips, fiesta strips, or red tortilla strips

Storage

Store your burrito in airtight containers or simply wrap up in plastic wrap and into the fridge it goes for up to 3-4 days. 

For freezing, wrap tightly and store for up to 2 months; thaw overnight in the fridge before reheating. Avoid freezing toppings like sour cream or avocado.

Reheat in the microwave or oven until warmed through.
