Ingredients for Green Goddess Pasta

  • Spaghetti
  • Cherry tomatoes
  • Extra Virgin Olive oil
  • Fresh basil leaves
  • Avocado
  • Spinach
  • Cashews
  • Lemon
  • Garlic
  • Nutritional yeast

Instructions for Green Goddess Pasta

Season & Bake Cherry Tomatoes.

Make the Sauce in a Blender.

Add Sauce to Pasta.

Add the Baked Cherry Tomatoes & Serve.

  1. Preheat your oven to 410°F (210°C). Place the cherry tomatoes on a small baking tray, season with salt and pepper, drizzle of olive oil, and toss to coat. Roast in the oven for 20 minutes until they're wonderfully caramelized.
  2. While the tomatoes roast, boil the spaghetti in large pot of water until it reaches al dente perfection. Remember to reserve some pasta water for the sauce.
  3. Meanwhile, prepare the green goddess sauce. In a blender or food processor, combining all the sauce ingredients, basil, avocado, spinach, reserved pasta water, cashews, lemon juice, garlic, nutritional yeast, olive oil, salt, and pepper. Blend until smooth and creamy. Adjust the consistency with more pasta water if desired.
  4. Once the pasta is cooked and drained, toss it with the green goddess sauce until well coated in a pan over medium heat.
  5. Serve the pasta with the roasted cherry tomatoes on top, adding an extra sprinkle of freshly ground pepper for an added kick or red pepper flakes for that spicy kick if desired.
  6. Indulge in this deliciously wholesome dish and savor every bite of its vibrant flavors. Enjoy!

Substitutions for Green Goddess Pasta

  • Spaghetti: Substitute with any other type of pasta such as fettuccine, penne, or linguine. For a gluten-free option, use chickpea pasta or gluten free pasta
  • Cherry tomatoes: Use grape tomatoes, Roma tomatoes, or heirloom tomatoes. Sun-dried tomatoes could also work, although they'll provide a different flavor profile.
  • Extra Virgin Olive Oil: Substitute with any other cooking oil such as avocado oil, vegetable oil, or sunflower oil.
  • Fresh Basil Leaves: Replace with dried basil, using about one-third of the amount as dried herbs are more concentrated. Alternatively, use fresh parsley, cilantro, or mint for a different flavor profile. But Fresh Basil Leaves are high recommended and a key ingredient in this recipe!
  • Avocado: Substitute with an equal amount of mashed cooked peas or cooked butternut squash for a creamy texture. Silken tofu can also provide a creamy texture when blended.
  • Spinach: Substitute with kale, Swiss chard, or arugula for a peppery flavor. Frozen spinach (thawed and drained) can also be used, though the texture will be slightly different.
  • Pasta Water: Use vegetable broth, chicken broth, or plain water for a lighter option.
  • Cashews: Substitute with blanched almonds, pine nuts, or sunflower seeds for a similar creamy texture. Tahini (sesame seed paste) can also add creaminess to the sauce.
  • Fresh Lemon:  Use store bought lemon juice or Lime juice.
  • Fresh Garlic: Substitute with garlic powder or garlic paste, adjusting the quantity to taste. Alternatively, use finely minced shallots or red onion for a milder flavor.
  • Nutritional Yeast: If desired, add a touch of grated Parmesan cheese, little bit of cream cheese or a vegan cheese if you like!

Storage

  • Store leftovers in an airtight container in the refrigerator for up to 2 days. 
  • To reheat, gently warm in a saucepan over low heat, stirring occasionally until heated through. Alternatively, microwave in short intervals, stirring in between. Adjust seasoning if necessary before serving.

3 Top Tips for Success

  • Make sure to use fresh ingredients for this recipe! Fresh Basil is one of the key ingredients, so I wouldn’t recommend using any substitutes.
  • Cook the pasta Al dente! This rich sauce needs a perfectly cooked pasta, avoid the mushy texture at all costs!
  • Customize Texture: Blend the sauce to desired consistency, adding more pasta water for a silkier texture or keeping it thicker.
