In Argentina, chimichurri is a popular marinade and sauce for grilled steak, but it’s also great with fish, chicken, lamb, or even pasta.

Ingredients

  • Olive Oil  
  • Red Wine Vinegar  
  • Parsley, Finely Chopped  
  • Garlic, Minced  
  • Red Chili, Deseeded and Finely Chopped  
  • Coarse Salt  
  • Pepper

Instructions

Add all ingredients to a bowl & mix.

Serve overtop your steak.

  1. Combine all ingredients in a bowl and let the mixture sit for 5-10 minutes to allow the flavors to meld. For the best results, let it rest for over 2 hours if you have the time. 
  2. Chimichurri can be made ahead and stored in the refrigerator for up to 24 hours. 
  3. Use it to baste meats like chicken or steaks while grilling or barbecuing. Although we prefer basting, you can use it as a marinade if you wish. Additionally, you can drizzle a couple of tablespoons over your steak when serving.

Substitutions

Olive Oil: Vegetable Oil, Canola Oil or Avocado Oil  

Red Wine Vinegar:  Balsamic Vinegar, Apple Cider Vinegar or White Wine Vinegar  

Parsley: Cilantro, Basil or Oregano   

Garlic: Garlic Powder, Garlic Paste or Shallots, Minced  

Red Chili: Red Pepper Flakes, Jalapeño or Green Chili

Coarse Salt: Regular Table Salt, Sea Salt or Kosher Salt

Storage

Store chimichurri in an airtight container in the refrigerator for up to one week. For longer storage, freeze it in ice cube trays and transfer the frozen cubes to a resealable plastic bag, keeping it in the freezer for up to three months.

  1. Use Fresh Herbs: Always use fresh parsley and cilantro for the best flavor and aroma. Dried herbs won't provide the same vibrant taste and can alter the texture.
  2. Balance Acidity and Oil: Ensure a balanced ratio of vinegar or lemon juice to olive oil. This balance is crucial for the sauce’s flavor profile, making it both tangy and smooth.
  3. Let it Rest: Allow the chimichurri to sit for at least 30 minutes before serving. This resting period helps the flavors meld together, enhancing the overall taste.
