1. Cook the Potatoes: Begin by bringing a large pot of salted water to a boil. Add the peeled and diced potatoes, and cook until fork-tender, about 10-15 minutes. 

2. Prepare the Meat Filling: While the potatoes are boiling, heat a large skillet over medium heat. Add pork lard or olive oil. Once hot, sauté the diced onions for 2-3 minutes until soft and fragrant. Add the ground beef, breaking it up as it cooks. Stir in the diced celery and carrots, cooking until the vegetables are tender and the meat is browned.

3. Add Flavor: Stir in the tomato paste and Worcestershire sauce, ensuring everything is well coated. Let the mixture simmer for 5-10 minutes, allowing the flavors to meld together. For a thicker consistency, stir in a small amount of flour at this stage (optional). Remove the skillet from heat once the mixture is done.

4. Make the Mashed Potatoes: Once the potatoes are done, drain them and return them to the pot. Mash thoroughly and mix in butter, milk or cream, along with your preferred seasonings (salt, pepper, garlic powder, etc.) until smooth and creamy.

5. Assemble the Pie: Preheat your oven to 400°F (200°C). In a deep 9x9-inch baking dish, spread the meat mixture evenly across the bottom. Layer the mashed potatoes over the meat, smoothing the top for an even finish. For an extra touch, grate Parmesan cheese over the mashed potatoes before baking (optional but highly recommended).

6. Bake and Serve: Bake the Shepherd's Pie in the preheated oven for 20-25 minutes, or until the top is golden brown. Let it cool for 5-10 minutes before serving.

  • Ground Beef: Substitute with ground pork, ground turkey, ground chicken or plant based ground meat for vegan option. 
  • Pork Lard or Olive Oil (for cooking): Substitute with beef tallow, butter, or vegetable oil. 
  • Tomato Paste: Substitute with crushed tomatoes (use slightly more for a similar taste), ketchup, sun-dried tomatoes or tomato puree.
  • Oregano: Substitute with thyme, basil or Italian seasoning. 
  • Butter: Substitute with Olive Oil, Margarine or Vegan Butter (for dairy-free)
  • Milk or Heavy Cream: Substitute with Almond Milk, Soy Milk or Coconut Milk.

Variations: Lamb & Rosemary Shepherd's Pie (Traditional Style):

Filling:

  • Swap out the ground beef for ground lamb for a more traditional Shepherd’s Pie flavor.
  • Add fresh or dried rosemary to the filling for a fragrant, earthy taste.
  • Include extra root vegetables like parsnips or turnips for depth of flavor and texture.

Topping:

  • Stick with the classic mashed potatoes but add a spoonful of Dijon mustard or a dash of nutmeg to the potatoes for added complexity.
  • Grate sharp cheddar cheese on top of the mashed potatoes for a golden, bubbly finish.

How to Store & Reheat

Freezing: Allow the Shepherd’s Pie to cool completely. Wrap it tightly with plastic wrap and then cover with aluminum foil, or store in an airtight, freezer-safe container. It can be frozen for up to 3 months. For easier reheating, you can freeze individual portions.

Reheating:

  • Preheat your oven to 350°F (175°C).
  • Place the Shepherd’s Pie in an oven-safe dish (if not already in one), cover with foil to prevent drying out, and bake for 10-15 minutes, or until heated through.
  • If you want a crispy top, remove the foil for the last 5 minutes of baking.
  • Microwaving: Place a portion of Shepherd’s Pie on a microwave-safe plate. Cover loosely with a damp paper towel to keep it moist. Microwave on medium heat for 2-3 minutes, stirring halfway through, or until hot all the way through.
