Bake for 30–35 minutes, until the tender chickenis cooked through and the potatoes are golden brown.
  2. Make the Classic Greek Salad: In a large bowl, combine diced tomato, persian cucumber (or english cucumbers), red pepper, and red onion. Toss with olive oil, salt, and feta for a simple cucumber salad that pairs perfectly with the chicken.
  3. Assemble the Greek-Inspired Bowl: Slice the chicken and layer it with roasted sweet potatoes, the classic Greek salad, and a spoonful of creamy tzatziki. Sprinkle with chopped parsley or fresh herbs for brightness.
