Ingredients

Bang Bang Chicken Skewers
  • Boneless & Skinless Chicken Thighs
  • Garlic Powder
  • Smoked Paprika 
  • Parsley 
  • Chilli Flakes
  • Olive Oil 
  • Lemon Juice 
  • Salt
  • Black Pepper
  • Mayonnaise 
  • Thai Chilli Sauce
  • Fresh Chopped Parsley

Instructions

Prepare the ingredients.

Bang Bang Chicken Skewers

Marinate the Chicken.

Prepare Skewers & Bake.

Brush with Bang Bang sauce mixture & serve!

**Soak wooden skewers in water for 20-30 minutes. 

  1. Start by dicing the chicken thighs into cubes and let them sit aside for marinating.
  2. In a large bowl, mix together the cubed chicken thighs, olive oil, garlic powder, smoked paprika powder, parsley seasoning, chilli flakes, lemon juice, salt, and pepper until the chicken is evenly coated.
  3. Take one wooden skewer/metal skewer at a time and thread 5-7 chicken cubes onto it.
  4. In a small bowl, combine the mayonnaise, Thai sweet chilli sauce, freshly chopped parsley, and pinch of salt. Mix thoroughly. Divide the mixture in half, reserving one portion for later use. Use the remaining sauce to coat the chicken skewers evenly.
  5. Prepare a baking sheet by lining it with parchment paper. Place the skewers in a single layer evenly spaced on the parchment paper (you can opt to use a baking rack for even cooking).
  6. Preheat the oven to 400°F and bake the skewers for 20-25 minutes, flipping them halfway through, or until the chicken's internal temperature reaches 165°F.
  7. Once baked, remove the skewers from the oven and brush them with the reserved "bang bang" sauce. Serve and enjoy!

Substitutions

Boneless & Skinless Chicken Thighs: Boneless & skinless chicken breasts, Boneless turkey thighs, Tofu cubes for a vegetarian option

Garlic Powder: Minced fresh garlic cloves, Garlic paste, Garlic salt (adjust salt quantity accordingly), Onion Powder

Smoked Paprika: Paprika, Chipotle powder

Parsley Seasoning: Basil Seasoning, Oregano Seasoning

Chilli Flakes: Cayenne pepper, Crushed red pepper flakes, Aleppo pepper flakes

Olive Oil: Canola oil, Vegetable oil, Avocado oil

Lemon Juice: Lime juice, White wine vinegar, Apple cider vinegar

Sea Salt: Kosher salt, Pink Himalayan salt

Black Pepper: White pepper, Cayenne pepper, Red pepper flakes (for a milder heat)

Mayonnaise: Greek yogurt, Sour cream, Vegan mayonnaise

Thai Sweet Chilli Sauce: Sriracha sauce, Red pepper jelly mixed with a dash of soy sauce

Freshly Chopped Parsley: Fresh cilantro, Fresh basil, Fresh chives

How to Store and Reheat

To store your Bang Bang Chicken Skewers, first, ensure they have cooled down to room temperature. Then, place them in an airtight container or wrap them tightly with aluminum foil. Store them in the refrigerator for up to 3-4 days. 

When reheating in the oven; Preheat your oven to 350°F (175°C). Place the skewers on a baking sheet lined with parchment paper or aluminum foil. Bake for about 7-10 minutes or until heated through. For reheating in the microwave; Place the skewers on a microwave-safe plate and cover them loosely with a damp paper towel to prevent them from drying out. Microwave on high for 60-90 seconds, or until heated through.

3 Top Tips for Success

1. Marinating Time: Allow enough time for the chicken to marinate. The longer it marinates, the more flavorful and tender the chicken will be. Aim for at least 30 minutes to 1 hour, or even overnight for maximum flavor infusion.

2. Even Threaded Skewers: Thread the chicken cubes onto the skewers evenly to ensure they cook uniformly. This helps prevent some pieces from being overcooked while others are undercooked. Consistent sizing and spacing on the skewers will result in perfectly cooked skewers.

3. Proper Cooking Temperature: Cook the skewers at the right temperature and time to avoid dry or undercooked chicken. Preheat your oven accurately and monitor the internal temperature of the chicken using a meat thermometer. Remove the skewers from the oven when the chicken reaches 165°F (74°C) to ensure they're cooked through but still juicy.
