- Finish the Cream: Add the salt, vanilla, sweetened condensed milk, mascarpone, and heavy cream to the bowl. Beat with an electric mixer, starting on low and increasing to high, until the mixture is thick and holds stiff peaks. It happens quicker than you'd expect — don't walk away!
- Divide and Color: Scoop out about 1½ cups of the plain white cream and set it aside for piping on top. Add 4 drops of red food coloring to the remaining cream and mix until it's evenly pink, then gently fold in the diced fresh strawberries. (WATCH VIDEO BELOW)
- First Layer: Quickly dip each ladyfinger into the strawberry sauce — one fast dip per side, about 1 second — and arrange them in a single layer in your 10 x 7-inch dish. Don't let them soak or they'll turn mushy!
- Layer It Up: Spread half of the pink strawberry cream over the ladyfingers. Add a second layer of dipped ladyfingers, then spread the remaining strawberry cream on top and smooth it out.
