3 Top Tips for Success!
- Ensure Proper Emulsification: When blending the ingredients, add the oil slowly in a thin, steady stream. This helps the mixture thicken and prevents it from separating.
- Use Fresh Ingredients: Freshly cracked eggs can enhance the flavor and texture of your homemade mayo. Fresh ingredients also reduce the risk of spoilage.
- Keep Everything Cold: Use chilled ingredients and refrigerate the mayo immediately after making. This helps maintain a stable emulsion and keeps the mayo safe to eat longer.

Talia says
Not the best - too watery but the taste there. I would recommend others wanting homemade mayo without the fear of raw eggs add 1/8 C of water, 1 tbsp of vinegar, a pinch of black pepper and 1/4 of oil to enhance the flavour and thickness. Otherwise, if you have an immersion blender, use real eggs. The heat from the blender will cook them through to a safe temperature for eating.
