Substitutions

  • Large Ripe Banana: Substitute with ½ cup unsweetened applesauce, mashed sweet potato, or pumpkin puree for a similar texture.
  • Rolled Oats: Use quick oats for a softer texture or quinoa flakes for a gluten-free alternative.
  • Maple Syrup: Swap with honey, agave syrup, or date syrup for a similar sweetness.
  • Coconut Oil: Replace with butter, ghee, or a neutral oil like avocado or olive oil.

Equipment

  • Large Non-Stick Pan
  • Measuring Cups & Spoons

Storage

Store any leftover soft cereal in an airtight container in the refrigerator for up to 2 days. Reheat in a non-stick pan over medium heat or in the microwave until warm. Add a splash of milk if it feels dry. For best texture, enjoy fresh!

Top tips

  1. Ripe Bananas Are Key: Use a ripe banana for natural sweetness and better caramelization.
  2. Low and Slow: Cook the oats over medium heat to avoid burning and achieve that perfect golden crunch.
  3. Stir Occasionally: Mix gently while cooking to evenly caramelize the oats without breaking up the texture.

FAQs

Can I use quick oats instead of rolled oats?

Yes, but the texture will be softer and less chewy. Rolled oats caramelize better and hold their shape, giving you that delicious crunch.

Can I make this recipe vegan?

It’s already vegan! Just ensure your milk topping is plant-based, like almond, oat, or soy milk.

How can I add more protein to this recipe?

Stir in a spoonful of nut butter, sprinkle hemp or chia seeds on top, or serve with a scoop of Greek yogurt or protein-rich plant-based yogurt.
