  • Sausage

Instructions

  1. Step 1: Whisk eggs.
  1. Step 2: Prepare the omelette.
  1. Step 3: Slice & fry sausage.
  1. Step 4: Assemble & roll the burrito.
  1. Step 5: Fry until golden brown.
  1. Step 6: Slice and serve!

Prepare the Eggs:

  • In a bowl, whisk the eggs with a pinch of salt and pepper.
  • Heat a non-stick pan over medium heat and cook the eggs to your preferred doneness, stirring occasionally. Set aside.

Cook the Sausages:

  • Slice the sausages into bite-sized pieces.
  • In the same pan, fry the sausage slices for about 5 minutes, or until they reach your desired level of crispiness.

Assemble the Burrito:

  • Lay the tortilla flat and place one slice of American cheese in the center.
  • Layer the cooked eggs and sausage slices on top of the cheese.
  • Add the second slice of American cheese on top.
  • Fold in the sides of the tortilla, then roll it up tightly to form a burrito.

Fry the Burrito:

  • Heat the butter in the non-stick pan over medium heat.
  • Place the burrito seam-side down in the pan and cook for about 3 minutes on each side, or until golden brown and crispy.

Serve:

  • Remove the burrito from the pan, slice it in half, and serve immediately.

Storage

To store, wrap the cooled burrito tightly in aluminum foil or plastic wrap and place it in an airtight container. Refrigerate for up to 3 days or freeze for up to 2 months. Reheat in a microwave or oven until warmed through before serving.

Top tips

  1. For fluffier eggs, cook them on low heat and stir gently to keep them soft. Adding a splash of milk or cream can also enhance their texture.
  2. To prevent soggy burritos, ensure the eggs and sausage are cooled slightly before assembling. This will help maintain the tortilla's structure and keep it crisp when fried.
  3. Customize the flavor by adding ingredients like sautéed onions, peppers, or a dash of hot sauce. These additions can elevate the burrito with extra flavor and texture.

Eggs:
  • 2 tablespoon pork lard or oil
  • 4 eggs
  • Salt & pepper
Sausage:
  • 2 tablespoon oil
  • 1 sausage sliced
Assembly:
  • 2 tortillas
  • 2 American cheeses

  • 1 teaspoon butter
